Banana Bread Baked Oatmeal
Baked oatmeal is one of the most filling and satisfying breakfasts, and it’s really easy to make. I especially love that this recipe is a good way to use up overripe bananas. If you have bananas on the verge of going bad, peel and then freeze them. This way, you’ll have bananas available to use for making Banana Bread Baked Oatmeal anytime you wish.

Ingredients
I do recommend that you read through my detailed instructions here in this post to make sure you fully understand the process of making Banana Bread Baked Oatmeal before you begin. I have the whole recipe with ingredients and instructions in an easy to print format at the end of this article.
Here are the ingredients you’ll need:
- ½ cup brown sugar
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 ½ cups over ripe bananas
- 2 eggs
- ½ teaspoon vanilla extract
- 2 ½ cups old fashioned rolled oats – Be sure you’re using regular old fashioned oats and not quick oats.
- 2 cups milk
- 1 cup chopped walnuts – The nuts are optional and the oatmeal is just as delicious if you decide to leave the nuts out. If you don’t like walnuts, try using pecans instead.
How to Make Banana Bread Baked Oatmeal
STEP 1: Preheat the oven to 350F degrees. Mash the bananas in a large bowl (I like to use a potato masher for this, but a fork works too).
STEP 2: In a large mixing bowl, whisk together the brown sugar, salt, baking powder, and cinnamon. Add the mashed bananas, eggs, and vanilla extract; stir well.
STEP 3: Stir in the oats, milk, and ¾ cup of the chopped walnuts.
STEP 4: Pour the oatmeal mixture into a 2-quart glass baking dish that has been greased with non-stick cooking spray. Sprinkle the top of the oatmeal with the reserved ¼ cup of walnuts, then cover the dish with foil.
STEP 5: Bake the oatmeal at 350F for 30 minutes. Remove the foil and bake the oatmeal for an additional 15 minutes.
STEP 6: Serve warm. Store leftover oatmeal in the refrigerator for up to 3 days.
