The Best Homemade Chicken Fried Rice with Yum Yum Sauce

I’ve been wanting to make really good fried rice at home myself. So after a lot of testing, I’m so happy to share my recipe with you!
The Ingredients
Here’s what you’ll need to make chicken fried rice at home:
- Sesame oil (or vegetable oil) – sesame oil adds great flavor, but vegetable oil can work just fine too.
- Diced onion
- Diced carrots
- Frozen peas – no need to thaw the peas! They’ll heat up right in the rice as it cooks.
- Eggs
- Cooked white rice
- Shredded cooked chicken
- Soy sauce
- Butter
- Salt and pepper to taste
How to Make Homemade Chicken Fried Rice
To begin, heat oil in a large frying pan or wok. Cook chopped onions and carrots until they begin to soften.
Add the frozen peas and stir them into the cooked onions and carrots. This will be enough to thaw the peas quickly, so there is no need to pre-thaw them.
Scoot the vegetables to the side of the pan, then pour lightly beaten eggs onto the empty side of the pan. Cook them just like you would scrambled eggs.
Once the eggs are cooked, add the cooked rice and chicken. I used rotisserie chicken breast to make this recipe extra easy and quick to make.
Stir the rice together and add the soy sauce. Let the rice pan fry a bit until hot. Add butter and stir until melted.
Now, it’s time to eat!
Shortcuts to Make Chicken Fried Rice Fast
- The rice cooking – cook your rice in a rice cooker or Instant Pot if available. These methods make rice fast and perfectly!
- Make ahead rice – if you know you’ll want to make chicken fried rice, make the steamed rice ahead of time and keep it in the refrigerator for up to two days before you add it to the fried rice.
- Easy chicken – The easiest chicken option is either leftover chicken or shredded rotisserie chicken. I also find cooked, shredded chicken at the deli counter at my local grocery store.
If you take some of these shortcuts, your chicken fried rice can be on the table in 20 minutes or less!

- 2 tablespoons sesame oil (or vegetable oil)
- ½ cup onion, diced
- ½ cup carrots, diced
- ½ cup frozen peas (no need to thaw)
- 2 eggs
- 3 cups cooked white rice
- 2 cups cooked chicken, shredded
- ½ cup soy sauce
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- Heat a large frying pan or wok over medium heat. Add the sesame oil, onions, and carrots; sauté until the carrots and onions are starting to become tender.
- Add the peas to the pan and stir well.
- In a small bowl, beat the eggs with a fork. Push the vegetable mixture to one side of the pan, then pour the eggs onto the other side of the pan. Use a spatula to scramble the eggs. Once the eggs are fully cooked, stir into the vegetables.
- Add the rice and chicken; mix well.
- Add the soy sauce then stir into the fried rice.
- Add the butter and stir the rice until the butter is melted.
- Season the fried rice with salt and pepper if desired.
- Serve the right hot with “yum-yum sauce.”
