I seem to get the same question very often: “do you have any quick, easy, and cheap dinner recipes that my family will love?” I get it! Dinner time is somehow so difficult to figure out sometimes. Everyone wants something different, we’re all super busy, and no one really has the energy to cook a complicated meal.

This is why I love Tater Tot Taco Casserole! It’s really easy, tastes great, and you can even customize the recipe to suit your families taste. Don’t like beans? No problem! Leave them out. You like guacamole but not sour cream! Perfect! Top your casserole with whatever you like!

The Ingredients

I’ll give you the full list of ingredients and recipe instructions below in the recipe card, but here is an overview of the ingredients you’ll need to make Tater Tot Taco Casserole:

  • Tater tots
  • Olive oil
  • Onion
  • Fresh garlic
  • Lean ground beef
  • Taco seasoning – you can use your favorite kind, or homemade taco seasoning
  • Water
  • Black beans
  • Frozen corn – no need to even thaw it!
  • Diced green chiles
  • Red enchilada sauce
  • Shredded cheddar cheese or Mexican blend cheese
  • Toppings: sour cream, sliced avocado, chopped tomato, cilantro, salsa, peppers, chopped black olives, etc.

Making Tater Tot Taco Casserole

To make the casserole, start by baking the tater tots for 15 minutes. Meanwhile, heat the oil in a large skillet over medium heat. Add the onions and sauté until they start to soften, then add the garlic and cook for 1 minutes. Crumble in the ground beef and cook until browned. Drain off the excess fat, then stir in the taco seasoning and water. Let the meat simmer (uncovered) for a couple of minutes, stirring occasionally.

In a large mixing bowl, combine the cooked taco meat, black beans, corn, green chiles, and enchilada sauce.

Add the cheese and mix well.

Scoop the taco mixture into a large glass baking dish. I love my big Pyrex dish for this!

Place the cooked tater tots on top of the casserole in an even layer.

Finally, sprinkle the whole casserole generously with shredded cheese.

Bake the casserole at 375ºF for 30 minutes until the cheese is melted.

What Toppings are Best for Tater Tot Taco Casserole?

In my house we LOVE sour cream. I can’t enjoy many Mexican/Tex-Mex foods without it, and my 8 year old is the same. So obviously, that is necessary topping when we have this casserole! But here are some other amazing topping ideas in addition to the sour cream:

  • Chopped tomato
  • Guacamole
  • Fresh cilantro
  • Salsa
  • Jalapeños
  • Chopped avocado
  • Shredded lettuce
  • Chopped onion
  • Black olives

Ingredients

  • 32-ounce bag frozen tater tots
  • 1 tablespoon olive oil
  • 1 small onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • 1-pound lean ground beef
  • 1-ounce package taco seasoning
  • ¼ cup water
  • 15 ounce can black beans, drained and rinsed
  • 12 ounces frozen corn (no need to thaw)
  • 4 ounce can diced green chiles
  • 10 ounce can red enchilada sauce
  • 3 cups shredded cheddar or Mexican blend cheese, divided
  • Toppings: sour cream, sliced avocado, chopped tomato, cilantro, salsa, peppers, chopped black olives, etc.

Instructions

  1. Preheat oven to 400F.
  2. Spread the tater tots out in a single layer on a large baking sheet. Bake at 400F for 15 minutes.
  3. While the tater tots are baking, heat the olive oil in a large skillet over medium heat. Add the onions and sauté until softened, about 3-4 minutes. Add the garlic and sauté for 1 minute. Do not allow the garlic to brown.
  4. Crumble the ground beef into the skillet and sauté, stirring often, until completely browned. Drain off excess fat. Add the taco seasoning and water to the meat and stir well. Simmer over medium heat for 1-2 minutes, then remove from the heat.
  5. In a large mixing bowl, combine the ground beef mixture, black beans, corn, green chiles, and enchilada sauce. Add 2 cups of the shredded cheese and stir well.
  6. Grease a 9×13 inch glass baking dish with non-stick cooking spray. Pour the enchilada filling mixture into the dish. Arrange the tater tots over the top in a single layer. Top the casserole with the remaining 1 cup of shredded cheese.
  7. Reduce the oven heat to 375F. Bake the casserole uncovered for 30 minutes or until the cheese is melted and the casserole is bubbling around the edges.
  8. Cool the casserole slightly, then serve with the toppings of your choice.
