Keto Can be Sweet
My husband has been keto for several years now. It’s made such a huge difference for him and his doctor is thrilled! But sometimes, you just want dessert. When he has a bit of a craving for something sweet, I whip up this Keto Strawberry Fluff Dessert. Other than chicken bacon ranch pizza, this is one of my guy’s favorite keto-friendly recipes I make!
Making Keto Strawberry Fluff Dessert
Start by beating heavy whipping cream until it is thickened.
Next, you’ll beat cream cheese until it’s soft and fluffy, then gently fold in the whipped cream. Add sugar-free strawberry Jello that has been dissolved in hot water and mix well.
A couple of fresh strawberries won’t add many carbs and do add so much flavor and texture. Chop the berries into small pieces and fold them into the keto strawberry fluff dessert.
This dessert is so pretty! Even non-keto eaters will enjoy it.
Pour the dessert mixture into a loaf pan or very small casserole dish and cover with plastic wrap. Refrigerate for 1 hour until set.

Ingredients
- 1 cup heavy whipping cream
- 1 8-ounce package cream cheese, softened
- 1/3 cup boiling water
- Tip: It may be easiest to bring a small pot of water to boil, then measure out 1/3 cup to use in this recipe.
- 1 package (.30 ounces) strawberry flavored sugar-free Jello
- 3 strawberries
Instructions
- In a large mixing bowl, beat the whipping cream with an electric mixer at high speed until thickened into whipped cream. Set aside.
- In a large mixing bowl, beat the cream cheese at medium speed until smooth. Add the whipped cream and mix well.
- Pour the strawberry gelatin into a small bowl. Add 1/3 cup of boiling water; mix well until the gelatin is dissolved.
- Stir the dissolved gelatin mixture into the whipped cream cheese mixture; stir well.
- Remove the stems from the strawberries and chop into small pieces. Fold the strawberries into the strawberry fluff.
- Scoop the strawberry fluff into a small pan, such as a bread pan. Cover with plastic wrap and refrigerate for 1 hour before serving.
