Discovering Keto Pizza
A few years ago my husband moved to a “Keto” way of eating. For him, this isn’t a diet; it’s a lifestyle and a new way of eating. It’s been pretty life changing for him and he has not only dropped weight, but also gained control of his Type II diabetes, cholesterol levels, and blood pressure. Please know, this is not a medical claim as I have no idea how the keto diet will work for you, but I do know my husband is doing super well with this way of eating.
As he was new to keto, he started experimenting with recipes. We especially loved the recipes that allowed him to enjoy some of his favorite foods without knocking him out of ketosis. This Keto Chicken Bacon Ranch Pizza is one of our favorites! Even I, the carb eater, will gladly eat this pizza.
Fat Head Pizza Crust
Keto Chicken Bacon Ranch Pizza uses a basic “Fat Head” dough as the crust. Fat Head dough is a high fat, low carb, gluten-free option when making pizza. It starts with melted cheese:
Then you’ll add egg and finely ground almond flour:
The dough is SUPER sticky, so you’ll want to oil your hands and then mix it by hand. It’s the easiest way I’ve found to incorporate all of the ingredients well.
After mixing the dough, I washed off my hands and oiled them again. This allowed me to press it onto a parchment paper lined cookie sheet with my hands to form the crust.
After shaping your pizza dough, you will pre-bake it in the oven before adding the toppings.
The Toppings
For making Keto Chicken Bacon Ranch Pizza I used shredded chicken, ranch dressing, crumbled bacon, and shredded mozzarella cheese.
I recommend you use the lowest carb dressing you can find. We like T. Marzetti’s Classic Ranch that is available in the refrigerated section of the produce area in our local grocery store. It does have carbs, but since we’re only using 1/4 cup in this recipe, it works just fine.
To top your pizza, first spread on the ranch dressing:
Next, add the shredded chicken:
For the shredded chicken, you can use leftover chicken, a rotisserie chicken, or make your own shredded salsa chicken. Salsa chicken is super easy! Just place several large chicken breasts in a slow cooker and cover with all-natural salsa. Cook on low for several hours until the chicken is tender and shreds easily. Remove the chicken from the slow cooker and discard the cooking liquid. Shred the chicken and use immediately or freeze to have on hand to use as needed.
Next, top your Keto Chicken Bacon Ranch Pizza with crumbled bacon:
Finally, add the shredded mozzarella cheese:
You’ll bake your pizza just until the cheese is melted.

Ingredients
- 1 ½ cups plus ¾ cup of shredded mozzarella cheese, divided
- 2 ounces cream cheese
- 1 egg
- ¾ cup almond flour
- 6 strips bacon
- ¼ cup ranch dressing
- 1 cup shredded chicken breast
Instructions
- Preheat the oven to 400F degrees.
- Pour 1 ½ cups of the shredded mozzarella cheese into a large microwave safe bowl along with the cream cheese. Microwave on high for 30 seconds. Stir well, then continue to microwave in 15 second increments, stirring between each interval, until the cheeses are completely melted. Stir until smooth.
- Quickly stir in the egg and almond flour. Work the dough in the bowl with clean hands until it forms a ball. It will be very sticky, so you may want to oil your hands first.
- Line a baking sheet with parchment paper. Place the dough in the center and use your hands to press it into a rectangle, approximately 9×13 inches.
- Bake the pizza crust at 400F for 8 minutes, or until it just begins to brown slightly around the edges. Remove from the oven and set aside to cool for 5 minutes.
- Reduce the oven temperature to 350F degrees.
- Cook the bacon in a skillet over medium heat until it reaches your desired crispness. Remove from the skillet and drain on paper towels or a cooling rack.
- Spread the ranch dressing evenly over the cooked pizza crust, leaving a small border of crust around the edges without the dressing. Add the shredded chicken over the ranch dressing.
- Crumble the bacon and sprinkle it over top of the chicken.
- Top the pizza with the remaining ¾ cup of shredded mozzarella cheese.
- Bake at 350F for 8 minutes, or until the cheese is melted.
- Cut into 6 pieces and serve immediately.
Makes 3 servings.
