A couple of years ago my husband was telling me how frustrated he was that his typical diabetes control diet wasn’t working. He was continuing to struggle with his weight in spite of watching his calories and working out. That’s when I mentioned to him that he should check out the keto diet.

Keto is low carbohydrate, moderate protein, and high fat. If you don’t know much about keto, I encourage you to do a little research. You might be surprised by how a person can lose weight and improve their health while eating a high fat diet!

My husband now easily loses weight and controls his blood sugar and cholesterol with a keto way of eating. He loves it!

Making Keto Chicken Legs

Your best friend when making Keto Chicken Legs will be Ziploc bags. Just pour the seasonings and sour cream into a bag, mix it up, then toss in the chicken legs to coat them in the mixture.

Crushed pork rinds make a perfect crispy coating for chicken! Just place them in a Ziploc and crush them with a rolling pin before adding in your chicken legs and coating them well.

Description

Chicken legs are a delicious, low-cost meal and made even better when they’re low carb! These Keto Chicken Legs will satisfy your hunger without wrecking your diet.


Ingredients

Scale
  • 2 pounds fresh chicken legs, skin left on
  • 1/2 cup sour cream
  • 2 tablespoon Cajun blackening seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper
  • 3 ounces pork rinds (usually the entire bag)
Tools:
  • 2 large freezer bags
  • Large baking sheet
  • Cooling rack that will fit on the baking sheet

Instructions

  1. Preheat the oven to 350 degrees.
  2. Place an oven-safe cooling rack on a large baking sheet. Set aside.
  3. Combine the sour cream, blackening seasoning, onion and garlic powders in one of the freezer bags.
  4. Add the chicken legs and shake to cover the chicken legs.
  5. Pour the pork rinds into the other freezer bag and use a rolling pin to crush.
  6. Transfer the coated chicken legs to the pork rinds freezer bag and shake to cover the chicken legs in the crushed pork rinds.
  7. Place the coated chicken legs on the rack on the baking sheet.
  8. Sprinkle salt and pepper over the chicken legs.
  9. Bake for 40-45 minutes until the chicken legs reach an internal temperature of 165 degrees Fahrenheit.
  10. Remove from the oven and let cool a few minutes. Serve with veggies or a side salad.

    At first, this is going to be another of the chicken recipes, but I was so wrong the taste was absolutely out of this world. The cajun seasoning really makes this unique. Thanks for this.

    I had creole seasoning rather than Cajun, so that’s what I used, but the chicken legs were flavorful and juicy and appreciated by my husband.
