No Bake Cheesecake Perfection
Aren’t no bake cheesecakes just the yummiest things? One of my favorites is the no bake cheesecake filling over a Nilla Wafer then topped with cherries. Yum, right?! But I have to say, No Bake Mini Peanut Butter Cheesecakes are my ultimate favorite and I think they will be yours too after one bite.
Making No Bake Mini Peanut Butter Cheesecakes
You’ll start your No Bake Mini Peanut Butter Cheesecakes by whipping cream cheese in a mixing bowl with an electric mixer. This step ensures the cream cheese is softened and you won’t end up with lumps in your cheesecake. You’ll then add a few other ingredients, including peanut butter and sugar:
After you neat it well with a mixer, you’ll end up with a thick peanut butter mixture that looks like this:
Next step is to whip heavy cream until it becomes stiff:

You’ll want to fold in half of the whipped cream gently, then fold in the remaining cream. This helps to keep the cheesecake mixture light and fluffy.

Finally, you’ll whip up some more cream and stir in powdered sugar to lightly sweeten the cream. This whipped cream can be piped onto the cheesecakes with a piping bag or a Ziploc bag with the corner snipped off. Or you can always just use a spoon!
There are so many topping options: crushed OREO cookies, chopped peanut butter cups, cocoa powder, shaved chocolate, M&M’s, and more. I opted for a drizzle of chocolate syrup. Doesn’t that look so good?!

Ingredients
- 12 OREO cookies
- 8 ounce package cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 tablespoon butter, softened
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream, divided
- 2 tablespoons powdered sugar
- Toppings of choice: crushed OREO’s, chopped peanut butter cups, grated chocolate, chocolate sauce, or M&M’S
Instructions
- Line 12 cups of a muffin tin with paper cupcake liners. Place one OREO cookie in the bottom of each cupcake liner.
- In a medium bowl, beat the cream cheese with an electric mixer until smooth. Add the peanut butter, sugar, butter, and vanilla extract and mix well.
- In a medium bowl, beat 1 cup of the heavy whipping cream until stiff. Fold half of the whipped cream into the peanut butter mixture until combined. Fold in the second half of the whipped cream and stir gently until smooth.
- Scoop the peanut butter cheesecake filling into the muffin tin on top of each OREO cookie.
- In a medium bowl, beat the remaining 1 cup of whipping cream until stiff. Gently stir in the powdered sugar. Spoon or pipe the whipped cream on top of each mini peanut butter cheesecake. Sprinkle the topping of your choice on top of the whipped cream.
- Refrigerate for at least 1 hour before serving.
Makes 12 servings.
