Sometimes, You Just Need a Bagel
What is it about bread shaped like a donut that make it just so necessary to my happiness? Bagels are a staple in my diet, so when eating low carb, it’s such a struggle to give them up.
My husband follows a keto way of eating, and when I decided to join him a few months ago I realized I needed to figure out a way to enjoy bagels without the carbs. Turns out, it can be done!
The key to the perfect keto bagels is the “fat head” dough. A fat head dough is made using cheese, egg, and almond flour. There are many variations, but it’s usually some combination of those ingredients.
When I first made these bagels, I was super hungry, so I sliced one fresh from the oven and ate it right away with cream cheese. Amazing! These bagels are so fantastic fresh from the oven, but also can be reheated in the microwave. I do not enjoy them cold, but I don’t like regular bagels cold either!

Making The Perfect Keto Bagels
To make the perfect keto bagels, you’ll need the following ingredients:
- Cream cheese – use full-fat cream cheese
- Shredded mozzarella cheese – use the pre-shredded kind in a bag
- Finely ground almond flour – I like Bob’s Red Mill almond flour and you can click here to see it on Amazon (affiliate)*
- Baking powder*
- Eggs
*To make the bagels gluten-free, be sure to use certified gluten-free almond flour and baking powder.
You will also want a topping for your bagel. Although this is not essential, it adds a little extra flavor and texture as well as making the bagels look extra appealing. I used poppy seeds on some of the bagels and sesame seeds on others. But there is this amazing everything bagel seasoning mix that would be perfect! I didn’t have it when I made the bagels, but I just picked some up and plan to use it next time.

Step-by-Step Instructions
Begin by melting together the shredded mozzarella cheese and cream cheese. I do this in my Pampered Chef batter bowl.
You’ll melt the cheese until they can be stirred smooth.
Next, add the almond flour, eggs, and baking powder. Stir quick so the eggs don’t scramble in the warm melted cheese.
You’ll end up with a sticky dough that looks like this:
Divide the dough into 6 equal pieces. Oil your hands (because the dough is sticky!) and then roll the pieces of dough into ropes and shape into bagels. Place the bagels on a baking sheet lined with parchment paper.
Be sure to make the holes in the center a bit bigger than you think they should be after they’re baked, because the dough will rise as the bagels bake which will make the holes smaller.
Sprinkle the bagels with the topping of your choice.
Finally, bake the bagels until golden brown.
If you’re like me, you’ll want to cut one right away, add a big dollop of cream cheese, and devour!
Another fantastic way to eat these bagels is to turn them into a sandwich. My husband made a keto sandwich with sliced turkey, provolone cheese, lettuce, sliced avocado, tomato, crispy bacon, and mayonnaise on one of these keto bagels. AH-MAZE-ING! Really, such a good sandwich. Try it!

Ingredients
- 2 ½ cups shredded mozzarella cheese
- 3 ounces cream cheese
- 1 ½ cup super fine almond flour
- 2 teaspoons baking powder
- 2 eggs
- Optional toppings – sesame seeds, poppy seeds, or “everything” bagel topping
Instructions
- Preheat oven to 400F degrees.
- Pour the shredded mozzarella cheese and the cream cheese into a medium microwave safe bowl. Microwave on high for 30 seconds; stir well. Continue to microwave on high in 30 second increments, stirring well between each 30 second increment, until the cheeses are completely melted. Stir until smooth.
- Whisk together the almond flour and baking powder. Add the almond flour mixture and eggs to the melted cheese and stir well. Be sure to stir quickly to incorporate the ingredients into the cheese mixture before the eggs scramble in the warm dough.
- Wash then oil your hands with cooking oil. Mix the dough by hand until it is completely smooth and all ingredients are incorporated very well. The dough will be quite sticky.
- Line a large cookie sheet with parchment paper or a silicon baking mat.
- Cut the dough into 6 equal portions. With oiled hands to prevent the dough from sticking, roll each portion of dough out into a log, approximately 10 inches long. Form the log into a bagel and place it on the lined cookie sheet. Repeat with the rest of the dough to form a total of 6 bagels.
- Sprinkle your topping of choice over the bagels. Wipe any excess bagel topping off of the cookie sheet to prevent burning.
- Bake the bagels at 400F for 12-14 minutes, until golden brown.
- Slice and serve hot with cream cheese. Store bagels in an airtight container in the refrigerator for up to 4 days; toast to reheat before serving. Makes 6 servings.
