The Holiday Snack I Can’t Go Without

“Are we making Mom’s Favorite Cowboy Caviar Recipe? Yes. The answer is always, yes. I love this dip! It’s my perfect blend of crunch, sweet, and tangy. Every Christmas, I make a big bowl of this Cowboy Caviar (some call it Texas Caviar) and keep plenty of tortilla chips on hand so I can snack whenever the mood strikes me.

It’s funny how such a strange blend of ingredients can be so GOOD! I really don’t like apple cider vinegar in anything, but it just works in this recipe.

Make this for a Christmas party, work potluck, or any holiday snacking occasion. I bet everyone will love it!

Making Mom’s Favorite Cowboy Caviar Recipe

This is really a very simple recipe to make. First, you’ll pour the dressing ingredients into a small pot and heat it to a simmer for two minutes until the sugar is dissolved. I then transfer the mixture to another container and refrigerate it until it is cold. You could even do this the night before you make your Cowboy Caviar. 

Next, you’ll chop the celery, green bell pepper, and onion. Do chop them finely, not in big chunks.

The Cowboy Caviar includes a can of white corn, pinto beans, and blackeye peas. I pour all of these into a colander together and rinse well to remove the canning liquids. 

Now, I specifically use Green Giant Super Sweet White Corn in this recipe. It is the best! If you can’t find it, use a different can of corn that you like.

Finally, stir together the freshly chopped veggies with the well-rinsed beans and corn.

Pour in the chilled dressing and mix well.

Cover and refrigerate the Cowboy Caviar for an hour to allow the flavors to blend.

Ingredients

Scale
  • ¾ cup apple cider vinegar
  • ½ cup vegetable or canola oil
  • 1 cup sugar
  • 1 can pinto beans
  • 1 can black eyed peas
  • 1 can sweet white corn
  • 1 cup celery, finely chopped
  • 1 cup green bell pepper, finely chopped
  • 1 small onion, diced
  • ½ teaspoon ground black or white pepper

Instructions

  1. In a medium sauce pan, combine the apple cider vinegar, vegetable oil, and sugar. Bring to a simmer over medium heat and then cook until the sugar is dissolved, approximately 1-2 minutes. Remove from the heat and set aside to cool to room temperature.
  2. Pour the cans of pinto beans, black eyed peas, and corn into a colander to drain. Wash with cool water to remove all of the canning liquids.
  3. In a large mixing bowl, combine the washed pinto beans, black eyes peas, and corn with the finely chopped celery, green bell pepper, and diced onion. Add the ground pepper and stir well.
  4. Pour the vinegar marinade over the vegetable mixture and stir well.
  5. Cover the Cowboy Caviar with plastic wrap and refrigerate for 1 hour before serving. Serve with corn tortilla chips.
  • Prep Time: 15 minutes
  • Cook Time: 5 minutes

    We have been looking for recipes to add more beans to our diet.
    I used what I had on hand. Dry beans in instant pot. And half the sugar in dressing. It came out yummy !
