Brownie Time!
Sometimes you just need a brownie! And not just any brownie; a really good brownie. I like them to be just baked enough to hold together, but still be very moist. Plus, the addition of chocolate chips or chunks is a must. They add more chocolatey goodness and extra creaminess when the brownies are warm.
Although I have absolutely nothing against a brownie made from a box, homemade brownies are really not too difficult to make at all. So why not try making them from scratch?
Making Rich and Fudgy Brownies
You’ll begin by melting butter. Isn’t that the best way to start any recipe?! Add sugar and whisk together until smooth.
You’ll want to bring the mixture to a simmer, then cool slightly.
Next, beat together the eggs, cocoa powder, and vanilla extract with the butter and sugar mixture. In a separate bowl you will combine the flour, salt, and baking powder, then add it to the wet mixture.
Finally, fold in semi-sweet chocolate chips or chunks. Spread the brownie batter into a greased baking dish and sprinkle with more chocolate chips/chunks.
After baking, let the brownies cool to room temperature. Now, you don’t have to do this. You certainly can dig right in to the hot brownies. However, they’ll probably be a gooey mess, more like fudge cake than a set brownie. Letting the brownies set as they cool will make them easier to slice and serve.
These brownies are super rich and decadent. They would be amazing with a scoop of vanilla bean ice cream and warm salted caramel sauce!

Ingredients
- 1 cup (2 sticks) butter
- 2 cups sugar
- 4 eggs
- 1 ¼ cups unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- 12 ounce bag semi-sweet chocolate chips or chunks, divided
Instructions
- Preheat the oven to 350F degrees.
- In a sauce pan, melt the butter over medium heat. Once the butter is melted, add the sugar and stir well. Cook over medium heat, stirring often, just until the mixture begins to simmer (do not allow the mixture to come to a full simmer). Remove from the heat and set aside.
- In a large mixing bowl, use an electric mixer to beat together the eggs, cocoa powder, and vanilla extract until smooth. Add the butter and sugar mixture and mix until smooth.
- In a separate bowl, mix together the flour, salt, and baking powder.
- Stir the dry mixture into the wet mixture.
- Reserve ½ cup of the chocolate chips or chunks. Stir the rest of the chocolate chips or chunks into the brownie batter.
- Spread the batter into a greased 9×13 inch glass baking dish. Sprinkle the reserved ½ cup of chocolate chips or chunks over the top of the batter.
- Bake the brownies at 350F for 30-40 minutes, until the edges are set. When the brownies are ready, a toothpick inserted into the center will come out mostly clean and not coated with raw brownie batter.
- Cool the brownies in the pan for 10 minutes, then cut and serve.
