Fruit Pizza Cupcakes are a perfect treat for any occasion! A homemade white cupcake topped with fresh whipped cream cheese frosting and piled high with all your favorite fruits and berries–a really refreshing dessert for any season.
Fruit Pizza Cupcakes
Recently, my daughter and I were having lunch at our favorite local cafe when I saw they had the most beautiful fruit tarts in the pastry case. Obviously we had to have one! The crust of the tart was like a soft sugar cookie–so delicious!
This fruit tart snack made me think I wanted to recreate something similar at home, but with a homemade white cupcake. As much as I love a good sugar cookie crust, I really love cake!
So into the kitchen I went and I created these really fantastic Fruit Pizza Cupcakes. You might call them fruit tart cupcakes, and either name is totally fine. They just reminded me so much of the fruit pizzas I love to make for a potluck dinner with the giant sugar cookie topped with cream cheese frosting and all sorts of fresh fruit. These cupcakes have a similar taste, but over a pillowy soft cupcake.

How to Make Fruit Pizza Cupcakes

STEP 1: In a large mixing bowl, cream together the butter and sugar with an electric mixer until light and fluffy. Add the egg whites and mix until well combined. Stir in the sour cream, milk, and vanilla extract, mixing just until the batter is smooth. It will be somewhat thin at this stage.
STEP 2: In a medium mixing bowl, whisk together the flour and baking soda. Add the dry mixture to the wet mixture and stir just until combined.
Here is what the cake batter will look like:
STEP 3: Line a muffin pan with paper cupcake liners. Scoop the batter into the liners to ¾ full.
Tip: a cookie scoop like this one makes filling the cupcake liners so simple!
STEP 4: Bake the cupcakes at 400ºF degrees for 5 minutes. While the cupcakes are still in the oven, reduce the heat to 350ºF degrees and bake for an additional 9 minutes, or just until the cupcakes have set in the center and no batter sticks to a toothpick when inserted into the cupcake. Cool the cupcakes to room temperature on a baking rack.
STEP 5: In a medium mixing bowl, beat the cream cheese and butter for the frosting with an electric mixer until smooth. Add the powdered sugar and vanilla; mix well. Add the heavy cream, one tablespoon at a time, mixing well with an electric mixer until the frosting is creamy and smooth.
Top the cooled cupcakes with the frosting.
STEP 6: Arrange the chopped fruit on top of the cupcake as desired. Serve the cupcakes immediately.

Tip: Choose fruits based on your color theme if serving for a party.
How to Store Leftover Cupcakes
Keep the leftover cupcakes in the refrigerator in an airtight container. Do be aware that the fruits will soften and release juices that will really change the texture and appearance of the cupcake. This is not a great make-ahead recipe, but if you want to make the cupcakes and frost them up to a day before needed, that will work just fine. Simply add the fruit right before serving for best results.
These cupcakes do not freeze well once frosted and topped with the fruit. The cakes themselves can be frozen in an airtight container for up to three months.
