Penne Primavera with Butter Sage Sauce

Are you suffering a case of the weeknight dinner blues? Fight it off with this easy Penne Primavera with Butter Sage Sauce! This easy meal is FULL of vegetables and buttery flavor.

My favorite tip of this recipe is all about the butter… NEW Land O Lakes® Soft Squeeze™ Spread! I loved using this so much because it is incredibly handy and delivers the perfect butter flavor to the penne primavera with ease. 

I picked up Land O Lakes® Soft Squeeze™ Spread in the butter aisle at Kroger:

Land O Lakes is always my favorite of mine because I know it is always made with simple, quality ingredients.

This is the butter I didn’t know I needed but now I won’t go without! No more trying to soften butter in the microwave and ending up with a melted center; Land O Lakes® Soft Squeeze™ Spread is made with real butter and is soft and ready to use right from the fridge. I also love that I don’t have to worry about toast crumbs in the butter anymore!

Making Penne Primavera with Butter Sage Sauce

To make Penne Primavera with Butter Sage Sauce, you’ll start by cooking penne pasta then setting aside while you steam the vegetables.

You can use any vegetables that you like in this dish. I used Zucchini, yellow squash, broccoli, yellow and red bell pepper. I also recommend asparagus spears. This meal contains a whole FOUR cups of vegetables!

Saute diced onions in Land O Lakes® Soft Squeeze™ Spread for a minute then add your fresh chopped vegetables. Cover the pan and allow to cook over medium heat until softened; about 10 minutes. 

After the veggies are cooked, add either white wine or chicken broth plus fresh chopped sage leaves. This all cooks with the veggies for just a minute, then finish the sauce with another tablespoon of Land O Lakes® Soft Squeeze™ Spread for extra buttery flavor. 

Freshly made Penne Primavera with Butter Sage Sauce

Finally, stir the penne into the vegetables and sauce and add freshly grated parmesan cheese. Garlish with more chopped sage and grated parmesan if you wish; it adds a pretty finishing touch!

Ingredients

8 ounces penne pasta
1/4 cup plus 1 tablespoon Land O Lakes® Soft Squeeze™ Spread, divided
1/4 cup onion, diced
4 cups fresh vegetables of choice, chopped (asparagus, broccoli florets, red bell pepper, yellow bell pepper, zucchini, yellow squash)
1/2 teaspoon garlic powder
1/4 cup white wine or chicken broth
4 fresh sage leaves, chopped, plus additional for garnish if desired
1/4 cup freshly grated parmesan cheese


Instructions

  1. Cook penne in boiling water according to package directions. Drain and set aside.
  2. In a medium skillet, heat Land O Lakes® Soft Squeeze™ Spread over medium heat until melted. Add the onion and cook for 1 minute.
  3. Add the chopped vegetables to the skillet and stir. Cover with a lid and cook over medium heat until the vegetables soften, 10-15 minutes; stir occasionally.
  4. Once the vegetables are tender, add the garlic powder, white wine or chicken broth, and chopped sage leaves. Stir well and cook for 1 minute. Add the grated parmesan cheese right before serving.

Garnish with fresh sage and parmesan cheese. Serves 4-6.
