Who here loves Mexican food?! *raising hand super high!* Do you have a favorite Mexican restaurant that you could eat at all the time? My family has two!
My six year old daughter’s favorite thing to eat is Mexican rice and refried beans with sour cream and corn chips or tortillas. She requests this as her meal at least a couple of times a week. Since we really can’t be hitting up our favorite Mexican restaurants nearly as often as she would like, this Instant Pot Mexican Rice recipe is a lifesaver! Instant Pot Makes It Easy!
I told you before that my poor Instant Pot sat in my guest room untouched for SIX MONTHS after I received it for Christmas. What even?! Crazy busy mom, that’s what.
It turns out, I have really been missing out on this Instant Pot thing! Do you have one? I am a big slow cooker fan, but the Instant Pot (which also has a slow cooker function) takes easy cooking to the next level.
This Instant Pot Mexican Rice was DONE and ready to eat in 20 minutes! I kid you not. And the refried beans I made, which would usually have to include overnight soaking and a long cook time, took less than an hour from start to finish. Amazing!
Making Instant Pot Mexican Rice
To start the rice, you’ll want to use the saute function on your Instant Pot to cook the onions in oil just until they begin to soften. Be careful not to cook too long, or they will brown quickly and that’s not what you want to accomplish here.
Once the onions are cooked, add minced garlic and saute for just about 30 seconds. Too much longer and the garlic will burn, so go easy.
Next, add rice, water, chicken broth (swap out the chicken broth for vegetable broth for a vegetarian alternative) and spices then give the mixture a good stir before setting the lid in place and starting the cooking. Ya’ll… it takes a whole FOUR minutes to cook. Yep. F-O-U-R minutes. Then you will need to allow the Instant Pot to release the pressure naturally for 15 minutes.
That’s it! Release the pressure valve then open the Instant Pot, fluff the rice, and serve. Yum.

Ingredients
- 2 tablespoons olive oil
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 cup chicken broth
- 2/3 cup water
- 8 ounce can tomato sauce
- 1/2 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 cups long-grain white rice
- Salt and pepper to taste
Instructions
- Select sauté option on your Instant Pot. Once the Instant Pot is hot, add the olive oil and onions then sauté for 3-4 minutes until the onions are softened. Add the minced garlic and sauté for 30-60 seconds (be careful that the garlic does not brown).
- Press the cancel button on the Instant Pot then pour in chicken broth, water, tomato sauce, chili powder, cumin, and rice. Stir well.
- Lock the pressure cooker lid in place with the release valve set to “sealing” position. Select manual (high pressure) and 4 minutes cook time.
- When the cook time ends, allow the pressure to release naturally for 15 minutes (do not manually release the pressure as the rice will continue to cook during the natural release time).
- After the 15 minutes of natural pressure release, carefully open the release valve to release any additional pressure. Once the pressure is fully released, open the Instant Pot. Stir the rice and serve warm.
