Fall Harvest Flavors
One of the best things about late summer and early fall is all the fresh produce! I am a big fan of buying local, organic, and dare I say cheap produce. Since I’m a failure in the gardening department, I rely on the farmers markets in my town as well as some trips to the orchard and farm produce stand.
It was during a trip to the apple orchard for my annual apple picking experience that I saw the butternut squash bin and inspiration struck. Time to make Savory Butternut Squash Soup!

When I make Savory Butternut Squash Soup, the most time consuming part is peeling and chopping the squash. So I recommend you buy your fresh butternut squash and prepare them all at once. Making Savory Butternut Squash Soup
Now that my freezer is filled with peeled and cubed butternut squash, I’m ready to make Savory Butternut Squash Soup any time!
Fill a large soup pot with chopped onion, carrots, and butternut squash.
Add a container of chicken stock or broth.
You’ll simmer your soup for 45 minutes until the vegetables are tender and beginning to break down when you stir the soup.
You will definitely need either an immersion blender or a really good regular blender for this recipe. I prefer an immersion blender, but if you do not have one, you can ladle the soup into a blender and puree in small batches.
Once the soup is pureed, stir in butter until melted and then whipping cream.
Now you’re ready to serve!
Top your Savory Butternut Squash Soup with a dollop of sour cream and a sprinkle of freshly ground black pepper. I also added a bit of parsley for a pop or green color.

Ingredients
8 cups cubed and peeled butternut squash
1 medium onion, diced
2 large carrots, peeled and diced
1 32 ounce box chicken broth or stock (reduced sodium recommended)
1/2 teaspoon salt
2 tablespoons butter
1/2 cup whipping cream
Sour cream and freshly ground black pepper for garnish
Instructions
- In a large soup pot, combine the butternut squash, carrots, onions, chicken broth, and salt. Heat over medium heat until the soup begins to simmer. Allow the soup to simmer uncovered for 45 minutes until the vegetables are very soft and begin to break down when stirring the soup.
- Remove the pot from the heat. Carefully blend the soup with an immersion blender until smooth (or puree in a blender in small batches, then transfer back to the pot).
- Stir in the butter until melted then add the cream and stir the soup until well blended.
- Serve the soup immediately with sour cream and black pepper if desired.
