I work full time with a commute and a family waiting at home for me every night. This isn’t a situation unique to me; 75% of moms with kids at home also work outside the home. The majority of them work full time. So we are juggling so many things and easy weeknight dinner recipes are a must!
That is why I love this Parmesan Crusted Baked Chicken. It’s made with ingredients that I almost always have on hand and the prep is very simple. Just mix up the coating ingredients, cut the chicken breasts, add the coating to the top, then bake. DONE!
Making Parmesan Crusted Baked Chicken
The first step is to butterfly and cut your chicken breasts in half. This is to make them thinner so they bake quicker. Here’s a great video on how to do this:
Next, place your chicken breasts into a glass baking dish:
Now you’ll mix up the coating ingredients:
Spoon the coating mixture evenly over the top of the chicken:
That’s it! Just pop it into the oven and then you’ll have some time to prep any sides that you want. I served my Parmesan Crusted Baked Chicken with Whipped Sweet Potatoes.

Ingredients
- 3 large boneless, skinless chicken breasts (about 2.5 pounds total)
- 3/4 cup mayonnaise (full fat, not light or fat-free)
- 1/2 cup freshly grated parmesan cheese
- 2 tablespoons plain dry breadcrumbs
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat oven to 425 degrees Fahrenheit.
- Cut the chicken breasts in half lengthwise to create six thin chicken breast filets. Use a meat tenderizing mallet to pound the thicker parts of the chicken breasts to make them the same thickness. Place the chicken breasts in a 9×13 glass baking dish.
- In a small bowl, mix together the mayonnaise, parmesan cheese, bread crumbs, and Italian seasoning. Spread the coating evenly over the top of the chicken breasts.
- Bake the chicken at 425 for 20-25 minutes, until golden brown on top and the chicken has reached 165 degrees.
