How hot is it where you live right now? I’m fairly lucky to live in an area where the summers aren’t insanely hot, but still, the 90+ degree days of summer here are hot enough!

Making Mini Ice Cream Sandwiches

I love an easy recipe, don’t you? Your kids might enjoy helping you create these little bite sized treats.

Mini Ice Cream Sandwiches

Simply arrange half of a box of NILLA Wafers on a large platter or plate, then scoop a heaping tablespoon of ice cream onto each wafer. Top the ice cream filled wafers with another wafer to create an ice cream sandwich.

Roll the edges of your mini ice cream sandwiches in the sprinkle colors of your choice. I used red, white, and blue for the 4th of July.

I recommend working in small batches to keep the ice cream from thawing. I filled about 6 sandwiches at a time, rolled them in sprinkles, then placed them in the freezer to set while I worked on the next batch of Mini Ice Cream Sandwiches.

Description

Mini Ice Cream Sandwiches are an easy and fun treat for any occasion! You can whip up these bite sized sweet snacks on a moments notice. Add flair with sprinkles that match your party or holiday!


Ingredients

Scale
  • 1 gallon Neapolitan ice cream (or ice cream flavor of your choice)
  • 1 box NILLA Wafers
  • Jimmie style sprinkles

Instructions

  1. Place 1/2 of the NILLA Wafers on a large plate or platter with the bottom side of the cookies facing up.
  2. Top the NILLA Wafers with one heaping tablespoon of ice cream, then top with another NILLA Wafer to create an ice cream sandwich.
  3. Pour sprinkles onto a small plate, then roll the edges of the mini ice cream sandwiches in the sprinkles.
  4. Place the mini ice cream sandwiches on the large platter and put into the freezer to freeze for one hour.
  5. Store the mini ice cream sandwiches in an airtight container in the freezer and serve frozen.

Notes

You may want to make the ice cream sandwiches in small batches to prevent the ice cream from melting. To do this, make 6-8 ice cream sandwiches then place them in the freezer while you out together the next batch of 6-8 sandwiches.
