Crunchy Salad Goodness
I was trying to think of a new, fun “salad” recipe to spice up the typical potato salad, macaroni salad, fruit salad lineup that is to be expected at every upcoming Memorial Day and 4th of July picnic. This Frito Salad Recipe is just the ticket!
Sweet corn, chopped fresh bell peppers, cheese, and Fritos are mixed with sour cream and mayonnaise to create a craveable side for your hamburgers, hot dogs, and anything else you’re grilling up.

Be sure to mix up your salad minus the Fritos, keep the mixture refrigerated, and then toss the Fritos in right before serving. This ensures that the Fritos are nice and crunchy when you eat! No one wants mushy Frito Salad!

I would also suggest reserving some of the corn and chopped bell peppers to sprinkle on top of the salad as garnish.

Ingredients
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
12 ounce bag frozen sweet corn, thawed
2 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup mayonnaise
10 ounce bag of Fritos corn chips
Instructions
- In a large bowl, combine the chopped red and green bell peppers, corn, shredded cheddar cheese, sour cream, and mayonnaise.
- Slightly crush the Fritos into smaller pieces. Add the Fritos to the salad and toss well. Serve immediately.
Makes 12 servings.
Notes
If you will not be serving the salad immediately, complete step one and then store the mixture in the refrigerator in a covered container. Toss the salad with the Fritos right before serving.
