School Lunch Surprise
Some days figuring out what to pack for school lunches is just plain no fun. It’s such a chore! But I do want my daughter to be excited to eat her lunch, so I’m always looking for ways to add a little surprise. I love Chunky Monkey Bites for just this reason!
Chunky Monkey Peanut Butter Banana Bites are easy to make, super cute, and filled with fresh banana and a peanut butter protein punch.
Easy Peasy Recipe Fun
To make Chunky Monkey Peanut Butter Banana Bites, all you need is bananas, semi-sweet chocolate chips, peanut butter, coconut oil, and sprinkles. Now, the sprinkles are optional, but they do make the Chunky Monkey Bites extra cute!

This recipe is very easy to adapt for allergies. If your child has nut allergies or can’t bring peanut butter to school to protect other kids with nut allergies, use an allergy-safe nut butter alternative instead.
If your child has a dairy allergy, you can very easily find semi-sweet chocolate chips that are dairy-free.
First, I chopped bananas into 1/2 inch thick rounds:
Next, I topped each banana slice with a heaping teaspoon of peanut butter:
I melted the chocolate in the microwave and mixed in a tablespoon of coconut oil. Then I placed each Chunky Monkey Bite on a fork and dipped them into the chocolate.
You’ll want to lift the Chunky Monkey Bite out of the chocolate and tap the fork on the side of the bowl to remove any excess chocolate before placing it onto a waxed paper covered cookie sheet.
I let my daughter add the sprinkles herself:

Lastly, let the Chunky Monkey Peanut Butter Banana Bites set in the refrigerator for about an hour until the chocolate it solid.

Chunky Monkey Peanut Butter Banana Bites are a fun treat the kids will love to see in their lunchbox! Dipped in dark chocolate and topped with colorful sprinkles, these peanut butter banana treats are sure to please.

Instructions
1. Line a large cookie sheet with waxed paper.
2. Peel the bananas and slice into ½ inch thick rounds. Lay the banana slices out in a single layer on the waxed paper lined cookie sheet.
3. Top each banana slice with approximately 1 teaspoon of peanut butter. This does not need to be an exact measurement or perfect spread.
4. In a medium microwave safe bowl, heat the chocolate chips in a microwave in 30 second increments, stirring every 30 seconds, until completely melted. Add the coconut oil and mix until well combined.
5. Use a fork to dip one peanut butter topped banana slice into the melted chocolate, peanut butter side up. Raise the slice out of the chocolate and then tap the fork on the side of the bowl to remove some of the extra chocolate. Slide the peanut butter banana bite off of the fork back onto the waxed paper. Repeat the process with each banana peanut butter bite. Top with colorful sprinkles if desired.
6. Place the cookie sheet filled with the bites into the refrigerator to set for one hour before serving.
Makes 8 servings. Store in an airtight container in the refrigerator.
