By October every year I am feeling that excitement for the Christmas season and looking forward to all of the sweet holiday experiences. Cookie baking is at the top of my list!

Left Over Cookies are not a Problem
There really are worse things in life than too many cookies. But if you do find yourself with an over abundance of cut out cookies, Christmas Sugar Cookie Truffles is a fun recipe to make to use up some of those cookies.
To make Christmas Sugar Cookie Truffles, you’ll need to make your own homemade sugar cookie crumbs. I used about twelve large (and thick!) un-frosted cut out sugar cookies to make the needed 3 cups of cookie crumbs. I put them in my Ninja Blender (affiliate link) and pulsed them until they turn into a fine crumb.
Add your cookie crumbs to a medium mixing bowl and combine with the cream cheese. This just seems to work best when done with your hands. Wash your hands very well, then dig in!
Form the dough into 1-inch balls. I prefer them to be on the smaller size because you will add a little more bulk to the cookie truffle with a dip in candy coating. Plus, smaller truffles just look prettier and are a nicer bite size than larger sizes.
Place all of your dough balls on a parchment paper lined cookie sheet and refrigerate for about an hour until well chilled.
Next comes the fun part! I used Naturally Flavored Vanilla Candy Coating from Kroger. It’s the best! It has the right flavor and melts so easily in its own microwave safe tray. Less clean up!
A fork is the perfect dipping tool. Just place a cookie dough ball on the fork, dip into the melted candy coating, then give the fork a few gentle taps on the side of the tray to allow any excess candy to drip off.
Place your truffles back onto the parchment paper lined cookie sheet. You can then decorate it immediately before the coating sets (which is quite fast since the dough balls are chilled!) or you can just dip them all and then add a pretty drizzle of candy coating before adding the sprinkles. The extra candy coating drizzle adds a fun touch and gives you some more melted chocolate for the sprinkles to hold onto.

Keep your finished Christmas Sugar Cookie Truffles in the refrigerator. I love to place them in mini paper muffin cups for serving.

Description

Ingredients
- 3 cups fine sugar cookie crumbs (see notes below for tips)
- 1 8-ounce package cream cheese, softened
- 16 ounces (1 pound) vanilla candy coating (in microwave safe tray if possible)
- Sprinkles for decoration
Instructions
- In a medium bowl, combine the sugar cookie crumbs with cream cheese and mix well until a soft dough forms.
- Roll the dough into 1-inch (or slightly smaller) balls and place on a parchment paper lined cookie sheet.
- Refrigerate the cookie balls for 1 hour.
- Melt the vanilla candy coating according to package directions. Dip each cookie ball into the candy coating then return to the parchment paper lined cookie sheet. Decorate with sprinkled immediately before the candy coating sets on the chilled cookie dough ball.
- Keep refrigerated until serving.
Notes
To make cookie crumbs: pulse un-frosted cut out sugar cookies in a blender or food processor until they break down into a fine crumb. I used 12 large cut out sugar cookies to make 3 cups of crumbs, however, the number of cookies needed will depend on the size and thickness of the cookies.
Next time you make homemade cut out cookies, make an additional batch to freeze and keep on hand to make Christmas Sugar Cookie Truffles.
For an extra decorative touch, dip all of the cookie balls in the vanilla candy and place on the parchment paper until set. After the candy coating has set on each cookie ball, use a fork to drizzle extra candy coating over the top of each cookie ball to create a pretty drizzled look, then add the sprinkles.
I recommend using a vanilla candy coating that comes in its own microwavable tray for easy melting and clean up.
