I love the weekends! Okay, so that’s not a unique statement because most people love the weekends. Friday is my day to play “stay-at-home mom” and run errands, clean the house, do fun things with my daughter, etc. Saturday is the day I usually just want to stay in bed all day… I wish I could! Sunday is church day and getting ready for the upcoming week.
What’s your weekend schedule like?
Yesterday (Friday) I took my daughter out for breakfast (LOVE doing this with her!), ran some errands, did a few chores at home, got dinner into the slow cooker, and most importantly, I made Chocolate Chip Cheesecake Brownies. You guys… these are so delish!
I actually came up with my version of Cheesecake Brownies when I was a teenager and I made them for my friends and family regularly. I only recently decided to add the chocolate chips, and I feel that was a very good decision!
Chocolate Chip Cheesecake Brownies are easy to make with ingredients you can keep in your kitchen at all times. So if you need a quick treat for family night, a party or potluck, new neighbors, and more, these are perfect.
Chocolate Chip Cheesecake Brownies start with a basic brownie batter. I use a mix because I’m cool like that. But seriously, brownie mix is just as good as homemade. If you have an awesome homemade brownie recipe and would like to disagree with me, there’s no need. This is not a subject that is all that important to me! Just go ahead and use your homemade brownie batter with this recipe and all will be well.
The cheesecake part of this recipe is just a basic sweetened cream cheese and egg mixture dolloped onto the brownie batter and then swirled around like this:
Chocolate Chip Cheesecake Brownies
1 brownie mix, batter prepared according to package instructions
8 ounces cream cheese, softened
1 teaspoon vanilla extract
1/3 cup sugar
1/2 cup semi sweet chocolate chips
1. Mix the chocolate chips into the prepared brownie batter then pour into a greased 9×13 inch glass baking dish. Set aside.
2. In a large mixing bowl, beat together the cream cheese, sugar, and vanilla with an electric mixer until well combined. Add the egg and beat the mixture for several minutes until very smooth.
3. Scoop the cheesecake batter onto the brownie batter. Use a butter knife to swirl the cheesecake and brownie batters together.
4. Bake the brownies at 350 for 35-40 minutes until the top of the cheesecake begins to become a very light golden brown.
Cool before cutting and serving. Makes 12 servings.
I hope you have a lovely weekend! I feel confident in saying that even if it’s a lousy weekend, these brownies will make it a little sweeter.
