Pumpkin Spice and Everything Nice
To me, fall means pumpkins and apples. There is plenty more to love about this season, but those two things are extra special this time of year. I’ve heard some debate between people as to whether they love apple season or pumpkin season more. My answer? Umm… both!
But for this baked oatmeal recipe, I clearly went to the pumpkin side. Call this Pumpkin Baked Oatmeal or Baked Pumpkin Pie Oatmeal or Pumpkin Spice Oatmeal… whatever sounds best to you. I call it yummy comfort breakfast food!
Making Baked Pumpkin Pie Oatmeal
This Baked Pumpkin Pie Oatmeal is really quite orange, and it’s all from the 100% pure pumpkin puree. Check out that gorgeous bright orange color!
When you’re making Baked Pumpkin Pie Oatmeal, be sure to use old fashioned oats and never use quick cooking oats. While quick cooking oats are perfect for some recipes, such as no bake cookies, they do not work well for this baked oatmeal. Go with all-natural old fashioned rolled oats.
Note: This recipe is so easy to make gluten free! Just use certified gluten free old fashioned oats and your GF friends and family will be able to enjoy the goodness too. Non GF folks will never taste the difference!
I always prefer to beat the eggs to start with a smoother consistency. Then I add in the pumpkin, milk, and vanilla and mix well. I also like to mix the spices into the brown sugar. This helps it all combine into the wet mixture without ending up with clumps of spices, which can happen sometimes when you pour spices right into a wet mixture.
Bake your Baked Pumpkin Pie Oatmeal in a greased casserole dish and then serve warm with toppings like whipped cream, fresh grated nutmeg, cinnamon, homemade caramel sauce, or warmed milk with a side of brown sugar for extra sweetness.

Ingredients
- 2 eggs
- 1 ½ cups milk
- 1 can (15 ounces) pumpkin purée
- 1 teaspoon vanilla extract
- ¾ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 teaspoon baking powder
- 2 ½ cups old fashioned rolled oats (not quick oats)
- Optional garnish: whipped cream, cinnamon, warm milk, freshly ground nutmeg, brown sugar, fresh fruit
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a medium mixing bowl, whisk the eggs by hand for 30-60 seconds. Add the pumpkin purée, milk, and vanilla; mix well.
- In a large mixing bowl, stir together the brown sugar, cinnamon, ginger, cloves, and baking powder. Add the wet mixture and oats; mix well.
- Grease an 8×8 or 9×9 inch baking dish with non-stick cooking spray. Pour the oatmeal mixture into the baking dish.
- Bake the oatmeal at 350 degrees Fahrenheit uncovered for 45 minutes.
- Cool slightly before serving.
Serve warm with the garnish of your choice. Makes 9 servings.

Yes, quite healthy! Other than the brown sugar, of course. But it can be made with less sugar for those who prefer that. Or even with a brown sugar substitute.

Me too! It’s so nice to mix up breakfast and then go do something else while it’s baking. Baked oatmeal is more dense than regular oatmeal and almost bread-like. So good!

I have not tried this yet, but I definitely think you could! My only concern would be that the oats might soak up a lot of the moisture overnight and so the oatmeal might need extra milk. Since I haven’t tried this before, I can’t recommend how much additional milk might be needed. If anyone tries prepping the oatmeal the night before, let me know how it turns out!
