I told you before in my Million Dollar Rice recipe that I’ve found my most favorite can opener. It’s such a little thing, but have you ever been frustrated trying to open a can with a can opener that can’t do the job? So annoying! And for making Sour Cream Green Chile Rice, you will need a can opener that won’t let you down.

I first ate Sour Cream Green Chile Rice when I was 18 and my roommate made it. It was so good I wanted to eat it all and not share! She gave me the recipe, but for some reason I never made it until recently. Now it’s going to be a go-to recipe, for sure!
Sour Cream Green Chile Rice is so easy to make and you can keep the ingredients on hand so you can whip it up any time. Just mix together cooked rice, a package of shredded cheese, a can of green chiles, and a tub of sour cream.

Sour Cream Green Chile Rice
Description
Sour Cream Green Chile Rice is an incredibly easy to make side dish that pairs perfectly with chicken, grilled meats, or Texmex meals. With just four simple ingredients that you can keep on hand, you’ll be able to whip up this yummy rice any night!
Ingredients
3 cups cooked white rice
4 ounce can diced green chiles
2 cups shredded cheddar cheese
16 ounce container sour cream
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Combine all ingredients in a large bowl. Spread the mixture into an ungreased 2-quart casserole dish.
- Bake at 350 degrees for 35-40 minutes until the cheese begins to brown around the edges. Cool slightly before serving.
Makes 8 servings.
