This is the creamy chicken a la king that I grew up eating. Now my sweet little daughter, who is an extremely picky eater, is old enough to help me make this family classic.

Chicken a la king can be served over rice, noodles, biscuits, or toast, but in my family we love it on waffles. You just have to try it! The soft inside, crispy outside waffle is the perfect match for the creamy sauce and chicken that nestles down into the little wells of the waffle. YUM!

Picky Eater’s Make Great Kitchen Helpers!

One way that I work to introduce my picky eating daughter to new foods is by encouraging her to help me prepare the food. This Simple Chicken a la King recipe is a great one for your children to make with you. My girl was the official sauce stirrer:

Chicken a la king is often made with cream and chicken broth, but mine is a simple, creamy béchamel sauce. Béchamel is a French word and it’s usually referred to here in the US as “white sauce.” It begins with a roux of butter and flour stirred together and cooked for a minute or two. Then milk is whisked in, the sauce is seasoned, and then you have béchamel!

Mushrooms are also a classic ingredient in chicken a la king. Try as I may, I’ve never been able to will myself to like mushrooms. It’s a little embarrassing to admit that. If you do love mushrooms, then they would be delicious in this dish! Slice fresh mushrooms then saute them in a little butter or olive oil for a few minutes before adding them to the chicken a la king.

My mom often prepared this Simple Chicken a la King recipe to use up leftover chicken. Sometimes she would buy a rotisserie chicken at the grocery store just for making chicken a la king. Either way, it was one of my favorite meals.

To cook the chicken for this recipe, I like to place about 2 pounds of chicken in a slow cooker and cook on low for about 4 hours or until fork tender. Then it’s ready to be used immediately in this recipe or I store it in the fridge until I’m ready to use it the next day. Easy!

Now, since this was a childhood classic recipe for me, I’m a purist and only want that all-American retro mix of veggies in this particular dish. I don’t think I ever use the classic mixed vegetables in anything else, but to me they are perfect for this very simple chicken a la king. You’ll find these mixed veggies (peas, corn, carrots, and green beans) in the frozen vegetable section. Feel free to use any vegetables you like best.

Ingredients

Scale

2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
Salt and pepper to taste
2 cups cooked chicken, shredded or diced
1 cup frozen vegetables, thawed (a vegetable mix of peas, carrots, green beans, and corn works well)
10 Eggo® Thick & Fluffy Original waffles, toasted


Instructions

1. In a large pan, heat the butter over medium heat until melted. Whisk in the flour and cook for 1-2 minutes, stirring occasionally.
2. Add in the milk 1/2 cup at a time, whisking until combined.
3. Bring the sauce to a simmer, stirring constantly, then reduce the heat to low.
4. Add the chicken and vegetables and stir into the sauce.
5. Season the Chicken a la King with salt and pepper to taste.
6. Serve over freshly toasted Eggo® Thick & Fluffy Original waffles.
Makes 5 servings.

Variations:
*Substitute 1 cup of the milk for 1 cup chicken broth or stock.
*Add sautéed mushrooms.
*Add freshly grated nutmeg to the sauce

    Okay, this is a little embarrassing to admit. I didn’t know what Chicken a la King was. It’s basically a deconstructed chicken pot pie! I’ve been making this on accident! I never thought to put it on a waffle though! I just put it over toast if I didn’t feel like making a crust. I bet it is delicious! Such a great idea – especially here in the South – who doesn’t love chicken n’ waffles?!

    I doubled the recipe but since I had no cooked chicken ,I decided to cube some chicken breasts coat them in flour,herb seasoning,garlic ,salt and pepper and fry them.Then I proceeded with the recipe. I did add nutmeg and some more herb seasoning to the white sauce . Served on Belgian waffles. It was delish with the extra seasoning.
