Description

Savory Butternut Squash Soup is comfort in a bowl! A creamy blend of butternut squash, carrot, onion, chicken broth, cream, and a touch of butter, this soup is a simple and savory version of the classic fall favorite.


Ingredients

8 cups cubed and peeled butternut squash
1 medium onion, diced
2 large carrots, peeled and diced
1 32 ounce box chicken broth or stock (reduced sodium recommended)
1/2 teaspoon salt
2 tablespoons butter
1/2 cup whipping cream
Sour cream and freshly ground black pepper for garnish


Instructions

  1. In a large soup pot, combine the butternut squash, carrots, onions, chicken broth, and salt. Heat over medium heat until the soup begins to simmer. Allow the soup to simmer uncovered for 45 minutes until the vegetables are very soft and begin to break down when stirring the soup.
  2. Remove the pot from the heat. Carefully blend the soup with an immersion blender until smooth (or puree in a blender in small batches, then transfer back to the pot).
  3. Stir in the butter until melted then add the cream and stir the soup until well blended.
  4. Serve the soup immediately with sour cream and black pepper if desired.
