Parmesan Crusted Baked Chicken is a cheap and easy dinner solution for your busy weeknights. Crusted in a mixture of mayonnaise, bread crumbs, spices, and parmesan cheese, this chicken is moist and flavorful and ready for your dinner plate in 30 minutes.

- 3 large boneless, skinless chicken breasts (about 2.5 pounds total)
- 3/4 cup mayonnaise (full fat, not light or fat-free)
- 1/2 cup freshly grated parmesan cheese
- 2 tablespoons plain dry breadcrumbs
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat oven to 425 degrees Fahrenheit.
- Cut the chicken breasts in half lengthwise to create six thin chicken breast filets. Use a meat tenderizing mallet to pound the thicker parts of the chicken breasts to make them the same thickness. Place the chicken breasts in a 9×13 glass baking dish.
- In a small bowl, mix together the mayonnaise, parmesan cheese, bread crumbs, and Italian seasoning. Spread the coating evenly over the top of the chicken breasts.
- Bake the chicken at 425 for 20-25 minutes, until golden brown on top and the chicken has reached 165 degrees.
