Description

Parmesan Crusted Baked Chicken is a cheap and easy dinner solution for your busy weeknights. Crusted in a mixture of mayonnaise, bread crumbs, spices, and parmesan cheese, this chicken is moist and flavorful and ready for your dinner plate in 30 minutes.


Ingredients

  • 3 large boneless, skinless chicken breasts (about 2.5 pounds total)
  • 3/4 cup mayonnaise (full fat, not light or fat-free)
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons plain dry breadcrumbs
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Cut the chicken breasts in half lengthwise to create six thin chicken breast filets. Use a meat tenderizing mallet to pound the thicker parts of the chicken breasts to make them the same thickness. Place the chicken breasts in a 9×13 glass baking dish.
  3. In a small bowl, mix together the mayonnaise, parmesan cheese, bread crumbs, and Italian seasoning. Spread the coating evenly over the top of the chicken breasts.
  4. Bake the chicken at 425 for 20-25 minutes, until golden brown on top and the chicken has reached 165 degrees.
