Mini Ice Cream Sandwiches are an easy and fun treat for any occasion! You can whip up these bite sized sweet snacks on a moments notice. Add flair with sprinkles that match your party or holiday!

- 1 gallon Neapolitan ice cream (or ice cream flavor of your choice)
- 1 box NILLA Wafers
- Jimmie style sprinkles
Instructions
- Place 1/2 of the NILLA Wafers on a large plate or platter with the bottom side of the cookies facing up.
- Top the NILLA Wafers with one heaping tablespoon of ice cream, then top with another NILLA Wafer to create an ice cream sandwich.
- Pour sprinkles onto a small plate, then roll the edges of the mini ice cream sandwiches in the sprinkles.
- Place the mini ice cream sandwiches on the large platter and put into the freezer to freeze for one hour.
- Store the mini ice cream sandwiches in an airtight container in the freezer and serve frozen.
Notes
You may want to make the ice cream sandwiches in small batches to prevent the ice cream from melting. To do this, make 6-8 ice cream sandwiches then place them in the freezer while you out together the next batch of 6-8 sandwiches.
