Homemade Fried Zucchini

Ingredients

2 pounds of zucchini (I prefer smaller size zucchini)
1/2 cup all-purpose flour
2 teaspoons garlic powder
1 teaspoon salt
2 eggs, beaten
1 cup panko breadcrumbs
1/2 cup freshly grated parmesan cheese
Vegetable oil for frying
Salt to taste


Instructions

  1. Wash and trim the ends from the zucchini. Cut the zucchini into 2-3 inch spears (think thick French fries size).
  2. In a gallon size plastic zipper bag, combine the flour, garlic powder, and salt then shake to combine. Pour the zucchini into the bag and shake to coat.
  3. Line a baking sheet with parchment paper, paper towels, or a cloth towel. Pour the beaten eggs into a shallow bowl. Mix the panko and parmesan cheese together in a separate shallow bowl. Dip each zucchini piece into the eggs and then roll in the panko mixture until well coated. Lay the coated zucchini on the baking sheet and repeat the process with all of the zucchini.
  4. Heat 2-3 inches of vegetable oil in a large pot over medium-high heat to about 350 degrees. Fry the zucchini fries in small batches for about 3 minutes until golden brown.
  5. Remove the fried zucchini from the oil and place on paper towels to allow any extra oil to drain off. Sprinkle the zucchini with salt to taste.
  6. Serve hot with ranch dressing. Makes 4 servings.
