Healthy Apple Cake Breakfast Cookies

1 1/3 cup oat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1/2 cup plain Greek yogurt
1 large egg
1 cup apple, peeled and diced
1/2 cup baking stevia (it is half sugar and half stevia)


1. In a medium mixing bowl, stir together all ingredients until well combined.
2. Scoop the cookie dough onto a greased baking sheet (give them a little space because they do spread a bit).
3. Bake at 350 for 13-15 minutes.
Makes 9 cookies.
