Oh how I love zucchini! Especially fried zucchini. When I’m eating in a restaurant that serves some sort of fried zucchini munchies, you can be sure I will be savoring some of the crunchy vegetable goodness… covered in ranch dressing.
In heaven I will eat these zucchini fries every day. Forever and ever.
If you love fried zucchini like I do, then you’ll be delighted to know you can make them at home! This makes me happy because it is much cheaper to make myself than to order from a restaurant. And that means I can eat more…
PrintZucchini Fries
Ingredients
2 pounds of zucchini (I prefer smaller size zucchini)
1/2 cup all-purpose flour
2 teaspoons garlic powder
1 teaspoon salt
2 eggs, beaten
1 cup panko
1/2 cup fresh grated parmesan cheese
Vegetable oil for frying
Instructions
- Wash and trim the ends from the zucchini. Cut the zucchini into 2 inch spears (think thick French fries size).
- In a gallon size plastic zipper bag, combine the flour, garlic powder, and salt then shake to combine. Pour the zucchini into the bag and shake to coat.
- Line a baking sheet with parchment paper, paper towels, or a cloth towel. Pour the beaten eggs into a shallow bowl. Mix the panko and parmesan cheese together in a shallow bowl. Dip each zucchini piece into the eggs and then roll in the panko mixture until well coated. Lay the coated zucchini on the baking sheet and repeat the process with all of the zucchini.
- Heat 2-3 inches of vegetable oil in a large pot over medium-high heat (350 degrees). Fry the zucchini fries in batches for about 2 to 3 minutes until golden brown.
Serve with ranch dressing. Makes 4 servings.
