Pumpkin Pancakes

1 1/4 cups all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup milk
1/2 cup pumpkin puree
1 egg, beaten
1 tablespoon vegetable oil


  1. Sift flour, sugar, baking powder, cinnamon, and nutmeg together in a medium
  2. In another medium bowl, whisk together milk, pumpkin, egg, and oil. Pour
    milk mixture into flour mixture and stir just until moistened.
  3. Heat a lightly greased griddle over medium-high heat. Ladle batter onto the griddle and cook until bubbles form and the edges are dry, 1 to 3 minutes per side.

Makes 8 pancakes
