Ingredients
5 large baking potatoes
Water
1/3 cup sugar
Vegetable or peanut oil for frying
Salt
Instructions
1. Wash and peel the potatoes. Slice them into thin strips to make fries.
2. Fill a large bowl halfway with cold water. Stir in the sugar. Pour the fries into the bowl. Cover the bowl and set aside for two hours or up to 8 hours in the refrigerator.
3. Remove the fries from the water and rinse well with cold water. Place on a towel and pat dry.
4. Fill a large pot with oil to at least 1 1/2 inches high. Heat over medium-high heat.
5. Fry the potatoes in small batches for 2-4 minutes until they are cooked through (the fries will be limp but not browned at all). Place cooked fries on a paper towel and set aside until you’re ready for the second fry. You can fry them again immediately or a couple of hours later.
6. Heat the oil again to medium-high heat and fry the fries for the second time; this time until golden brown (2-4 minutes).
7. Place cooked fries on a paper towel to drain off excess oil. Salt to taste and serve hot.
