This is not an original recipe, I’m quite sure. I didn’t actually use a recipe to make this though. I was in the mood for potato salad and decided to make some myself. Turned out really well!

Don’t buy potato salad! It’s easy to make, tastes better when homemade, and is cheaper to make yourself.

Here is my basic homemade potato salad recipe:

2 1/2 to 3 lbs red skin potatoes, washed and then sliced into 1-inch cubes (leave the skins on)
3/4 cup mayonnaise
1 cup sour cream
1/4 cup mustard
4 eggs, hard boiled then peeled and chopped
1/4 cup pickle relish
1/2 of a medium onion, diced very finely
Salt and pepper to taste

Boil the potatoes until tender. Drain the water and cool the potatoes.

In a large bowl combine all ingredients and toss gently until the potatoes are coated. Add more mayonnaise and/or sour cream if needed and depending on your taste preference.

Store in the refrigerator and serve cold.

Note: Diced celery would also be a nice addition. I didn’t use any because I rarely have it on hand.

See?! Simple!
