Making Pineapple Cake with Cream Cheese Frosting
When making Pineapple Cake with Cream Cheese Frosting, you will need a good can opener. I told you before in my Million Dollar Rice recipe that I’ve found my most favorite can opener. It’s such a little thing, but have you ever been frustrated trying to open a can with a can opener that can’t do the job? No good!
My husband bought me a PowerLix can opener (affiliate link!) and it works so well every time, pretty much eliminating those sharp can edges. I love this can opener. Just thought you should know.
To make your cake, you’ll combine the dry ingredients in a large mixing bowl.
I like to use a whisk to mix the dry ingredients.
Next, you’ll add the canned pineapple, eggs, and vanilla then mix well.
Use a 9×13 glass baking dish (like a Pyrex dish) for your cake. Grease it well with non-stick cooking spray, pour in the batter, then bake. Please be aware that the cake does get pretty dark! Think banana bread color. This is totally fine! Even so, I do cover the cake with foil after 20 minutes of baking to prevent the cake from getting too brown.
While your cake bakes, whip up the simple, classic cream cheese frosting.
Cool the cake completely, then top with dollops of the frosting and spread it out evenly with a spatula.
So yummy! Be sure to refrigerate any leftovers.

Ingredients
2 cups all-purpose flour
2 cups granulated sugar
2 teaspoons baking soda
1/4 teaspoon salt
2 eggs
20 ounce can crushed pineapple (do not drain)
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 325 degrees Fahrenheit.
2. Whisk together the flour, sugar, baking soda, and salt.
3. Add the eggs, crushed pineapple, and vanilla and mix well.
4. Pour the cake batter into a greased 9×13 inch glass baking dish. Bake the cake for 20 minutes at 325 then cover loosely with foil to prevent over browning. Return to the oven to bake for an additional 5-10 minutes until a toothpick comes out clean when inserted into the center of the cake.
5. Cool completely then ice the cake with homemade cream cheese frosting.
Cream Cheese Frosting:
8 ounces cream cheese, softened
4 tablespoons butter, softened
2 cups powdered sugar
1 teaspoon vanilla
Beat the butter and cream cheese with an electric mixer until smooth and creamy. Add vanilla and powdered sugar and mix well.
Notes
The cake will become quite brown as it bakes. It should be a deep golden brown, similar to the color of baked banana bread.
