This past Saturday morning was really confusing to my four year old. I had a Saturday meeting, so bright and early I was attempting to wake my girl up to get her ready and off to my moms house for the day. My daughter is not a morning person… a lot like me! After several failed attempts to get her up and going, I finally pulled the covers off of her and said “baby girl, you have to wake up!” She rolled over, pulled the covers back over her, and said “No! I wanna sleep!” I said “I understand, but this morning you can’t. You can sleep in tomorrow.” She rolled herself over so she was facing me. Her eyes were more closed than open and she snarled in the cutest way, “I want to sleep in NOW!”
Poor girl. I don’t like waking up early either. My alarm goes off and I want to cry “I can’t be an adult today!” Because mornings are already a struggle for me, a delicious, nutritious, and easy to grab and go breakfast is a life saver.

Upping the protein and fiber in my diet has been helping to keep me feeling satisfied. Peanut Butter Chocolate Chip Muffins give me a great boost in the morning or as an afternoon snack.
These muffins are so easy to make! Just mix up all the ingredients in one bowl…
… then bake for 20 minutes.
Peanut Butter Chocolate Chip Muffins
1 1/4 cup organic oat flour
1/2 cup baking stevia and sugar blend
1/2 teaspoon baking soda
1 teaspoon baking powder
1/3 cup Jif Peanut Powder
3/4 cup plain Greek yogurt (reduced fat)
1 whole egg plus 1 egg white
1/2 teaspoon vanilla extract
1/3 cup semi sweet or dark chocolate chips
- In a medium mixing bowl, stir together the oat flour, baking stevia, baking soda, baking powder, Jif Peanut Powder, Greek yogurt, egg and egg white, and vanilla.
- Fold in the chocolate chips.
- Grease 8 cups of a muffin tin or line with cupcake liners. Fill each of the 8 cups 3/4 full with the batter.
- Bake the muffins at 350 for 20 minutes, or until golden brown and when a toothpick is inserted into the center of a muffin and comes out clean.
Makes 8 servings.

Jif Peanut Powder is obviously amazing for baking, but also for making delicious smoothies! This smoothie I made was my effort to find a better way to treat myself to a milkshake.
Silk Almond Milk, low fat chocolate ice cream, and Jif Peanut Powder can be whipped together in your blender to make a delicious frozen, creamy, chocolate, peanut butter treat. I actually used a low fat chocolate brownie ice cream because that’s what I had. It worked perfectly!
Step 1: In your blender, combine 1 cup low fat chocolate ice cream, 2 tablespoons Jif Peanut Powder, and a splash of Silk Almond Milk (I used 1/4 cup, but use more or less depending on how thick you would like your shake).
Pulse the milkshake until smooth.
Just for fun, I topped my shake with one serving of reduced fat whipped cream.
