These Pan Fried Noodles in Peanut Sauce are soooooo good! When I served it to my husband his reaction was strongly positive. Like, “I could eat this for the rest of my life,” kind of positive. And really, I’d probably be ok with eating this for the rest of my life too!

1/2 pound of dry fettuccini noodles
1/3 cup crunchy peanut butter
1/3 cup soy sauce
1/4 cup white vinegar
1/4 cup brown sugar
Hot sauce to taste
1 small onion, diced
1 clove of garlic, minced
Lemon or lime wedges for garnish
Oil for cooking

1. Bring a pot of salted water to a boil then cook the fettuccini noodles just until al dente; drain.
2. In a large frying pan, heat 2 tablespoons of oil over medium high heat then add the cooked noodles. Fry the noodles stirring occasionally to make sure they do not burn. Your goal is to add some texture and even a little browning to the noodles as you fry them. Stir fry the noodles for 10-20 minutes just based on your own preference.
3. In a small frying pan, heat 1 tablespoon of oil over medium heat and cook the onions until translucent. Add the garlic and cook for about two minutes longer.
4. In a medium bowl mix together the peanut butter, soy sauce, vinegar, brown sugar, and hot sauce. Wisk until combined. Stir in the cooked onion and garlic mixture. Add the sauce to the noodles and stir fry for another 10 minutes. Watch the heat carefully to ensure you do not burn the noodles an sauce. The end result should be saucy noodles with a great pan fried texture.
Serves 2 (or 3-4 if you add grilled chicken and steamed vegetables)

    Pretty good. Did sauce X5. Doubled noodles, added 1lb chicken, 1 and 1/2 lb stir fry vegetables. A little too much sauce. Would reduce sauce to x4 and take out a little soy and vinegar. I drained off the extra sauce and am going to mix it with some plain takeout noodles for a quick lunch or two.
