Oats in Bulk
Do you shop Sams Club? I always loved shopping at Sams growing up (can you say “samples”?!) and just recently got a membership for my family. Buying in bulk is one easy way I save money on groceries and household items.
On my recent trip to Sams Club, I purchased a 10 pound box of oats. Yep, TEN POUNDS! Do we really eat that much oatmeal for breakfast in my house? Well, my three year old does love her morning oatmeal… but actually, most of those oats will be used for something totally different… More on that in a moment.
Buying oats in bulk means I always have this super food on hand.
That’s right… oats are a super food! Eating oats can help reduce your “bad” cholesterol and it’s great for your blood pressure. Oats contain beta-glucans which is a type of fiber that slows down the absorption of carbohydrates into the bloodstream. This slower digestion prevents spikes in blood sugar and insulin levels that would encourage our bodies to make and store fat. So yeah… that’s a win!
Healthy Apple Cake Breakfast Cookies
I pulled together some healthy ingredients from around my kitchen: oat flour, Greek yogurt, eggs, cinnamon, and apples. Seemed like the start of a great recipe!
I chopped apples and added all of the ingredients to the bowl as I kept track of how much I was adding… just in case the experiment turned out well and I could share my new recipe with you! That is how most of my recipes are created. Some pass the taste test and some… well, I can’t be perfect every time!
In this case my experiment totally worked! Actually, it turned out even better than I had expected.
I know the cookies look a bit rustic; but trust me, they’re delicious! I’m calling them Healthy Apple Cake Breakfast Cookies because the flavor reminds me so much of the Tastefully Simple Nana’s Apple Cake mix that I’ve tasted and purchased at home parties.
These breakfast cookies are totally satisfying, have a great texture, and will be easy to eat on the run.

Ingredients
1 1/3 cup oat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1/2 cup plain Greek yogurt
1 large egg
1 cup apple, peeled and diced
1/2 cup baking stevia (it is half sugar and half stevia)
Instructions
1. In a medium mixing bowl, stir together all ingredients until well combined.
2. Scoop the cookie dough onto a greased baking sheet (give them a little space because they do spread a bit).
3. Bake at 350 for 13-15 minutes.
Makes 9 cookies.

These look so yummy! I love any thing with oatmral- except cooked oatmeal- weird I know. I love the Cinnamon Spice Oatmeal! I add very warm (but noy super hot) water, stir and eat. Its more like a cereal. Soon yummy! I bet this would be great with the Quaker Oats Cinnamon Spice. Gonna try it

So, subbed the greek yogurt for coconut buttermilk – 1 cup coconut milk, add 1 teaspoon lemon juice, mix, let stand for 5-10 minutes. We made a double batch to take on a playdate, and they turned out great.
