Most of the time when we make cookies in our house we are making these awesome healthy cookies. They really are tasty and much healthier than traditional chocolate chip cookies.
These cookies are also a great way to hide vegetables! My girl is very stubborn about eating her veggies, so this mama has to get creative. The sweetness of the banana does a great job of masking grated vegetables like carrots and zucchini.
Use your imagination with this recipe and figure out how you like them. Here are some other possible mix in options if you would like to switch out the chocolate chips for something else:
- Grated carrots, cinnamon, and raisins
- Grated zucchini and chocolate chips
- Finely chopped apples, walnuts, and cinnamon
- Dried cranberries and white chocolate chips
1 over ripe banana, peeled
1/2 cup quick oats (less or more depending on the size of the banana)
1/3 cup chocolate chips (or other mix in)
In a medium size bowl, mash the banana until smooth. Stir in the quick oats a little at a time until the batter can be formed into a ball but is still very moist. Add the chocolate chips (or other mix ins) and stir well. Scoop the cookies onto a greased cookie sheet and bake at 350 for about 10 minutes.
