Warm, gooey, cheesy, sweet… yes please! If we have anything in common at all, then you’re sure to love my awesomely delicious take on Fiesta Corn Dip!
8 ounce block of cream cheese, softened
8 ounces of shredded Colby jack cheese
1/2 cup grated parmesan cheese
1 cup mayonnaise
1 12-ounce jar of roasted red peppers, drained and diced
4 ounce can of diced green chilies
16 ounce bag of frozen corn, thawed
In a medium sized bowl, mix all ingredients well. Pour the mixture into a casserole dish and bake at 375 for 45 minutes until the top is bubbly and golden brown. Serve with corn tortilla chips.
