It’s June and that means it is strawberry season! Woo hoo! I really love strawberries. Recently I needed to make a strawberry dessert for a church event. I started to look for recipes and then realized I really could come up with something on my own. Not that this is an extraordinarily unique recipe, but it’s yummy so whatever!
2 packages of brownie mix, prepared according to package directions (I used a super cheap mix and it worked perfectly)
1 10oz package semi sweet chocolate chips, divided
1 tub Cool Whip
1 8oz package of cream cheese, room temperature
1 teaspoon vanilla extract
1/4 cup sugar
2 pounds of strawberries, washed and sliced into fourths
Heat your oven to 350 degrees. Spray a large cookie sheet (I used a 12×17) with cooking spray then cover the bottom of the sheet with parchment paper.
In a large bowl, mix together the prepared brownie batter and half of the bag of chocolate chips. Spread the batter evenly onto the cookie sheet. It should be a little less than 1 inch in thickness (think thick pizza crust). Bake the brownie according to package directions then set aside to cool. Important: You will need to reduce the baking time since the batter will be spread thinner than typical brownies. Cut about 10 minutes off of the recommended baking time and be sure to check on the brownie as it bakes.
With an electric mixer, beat together the cream cheese, sugar, and vanilla until smooth. Gently mix in the Cool Whip. Spread the cream cheese mixture over the completely cooled brownie crust then top with the strawberries.
In a small microwave safe bowl, heat the remaining chocolate chips for 30 seconds at a time until melted. Drizzle the melted chocolate over the strawberries.
Refrigerate the pizza until serving. Makes 24 servings.
