One of the absolute best things about this time of year is all the fresh produce. Is anyone else a huge fan of farmers markets? As I do not have a green thumb or any free time to garden even if I did, I am ever so thankful for the locals who bring their harvest to the town square every Saturday morning. I soak in the smells and sounds and tastes and pretty colors.
One of my favorite things to buy fresh from the farmers market is zucchini. This is such a versatile vegetable. I sauté it in olive oil with caramelized onions and eat it in a big bowl; serving after serving with no guilt!
Another fantastic way to use all the summer zucchini is to make homemade Classic Zucchini Bread. The sweet cinnamon aroma of this piping hot bread is a thing of beauty, second only to the delicious taste!

Ingredients
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 1/4 cups sugar
- 2 teaspoons vanilla extract
- 2 cups grated zucchini
Instructions
1. Preheat oven to 325.
2. In a medium mixing bowl, whisk together the flour, salt, baking soda, baking powder, and cinnamon.
3. In a large mixing bowl, beat together the eggs, vegetable oil, sugar, and vanilla. Add the zucchini and flour mixture; mix well.
4. Pour the batter evenly into two greased 8×4 inch baking pans.
5. Bake at 325 for 1 hour.
6. Cool for 20 minutes, then slice and serve.

This sounds delicious. I have my grandmother’s recipe and it has pineapple in it which makes it super yummy! Are the 47 carbs for the whole loaf or just a slice? I recently found date sugar which I want to try because it is more glycemic friendly. I think I will give that a try! I love Tradewinds Tea! Thanks for sharing!
