Butter Tortillas

Homemade flour tortillas? Yes, please! There really isn’t anything better than a homemade tortilla! I especially love flour tortillas and so learning to make them at home was a must do. My Mexican friends make them with lard, which of course is wonderful. But I no longer eat or cook with pork products. Vegetable shortening is a good substitute for the lard, but I really prefer to use butter.

My daughter has a weird word she uses often. Her word is “bummum.” This word means two things: butter and better. Really, it makes sense. Butter = Better

Butter TortillasI’m calling these “butter tortillas” but really they’re just flour tortillas made with butter as the fat. Still, Butter Tortillas just sounds much yummier!

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/4 cup cold butter
3/4 cup hot water

In a medium size bowl combine the flour, baking powder, and salt. Work the butter into the mixture with a pastry cutter or your hands. Once the butter is well incorporated (the mixture will be a bit like moist sand) stir in the water.

Butter TortillasTurn the dough out onto a floured surface and knead gently just a few times. Do not over knead or incorporate too much additional flour or you’ll end up with tough tortillas.

Form the dough into a ball and divide into 8 pieces. Flatten each ball with your hands on a floured surface and then roll out with a rolling pin. Cook each tortilla in a dry skillet over medium high heat until lightly browned on each side.

Tip: This recipe will give you 8 tortillas which will be enough for up to three people. For a family of four I would double the recipe (no harm in having leftover tortillas!). I often destroy the first tortilla and one or two seem to disappear as soon as I get them cooked…

Homemade tortillas are the best! I always loved when my mom made them when I was a kid. Store bought just can never compare to fresh.

I made butter from whipping cream the other day. This gives me something to make with that butter. Woohoo.
