Fall always inspires me to be creative! It’s fun to try a new twist on old favorites. In this case I dreamed up Autumn Harvest Sweet Nachos. Can you say deeeeeelicious?!
The idea for these nachos came to me when I saw the Celebrate Fall Flavor display at Giant Eagle. I love my Giant Eagle! I know I’ll always find what I need and the best quality items I expect. These yummy fall flavors were totally tempting! I had to try the Pumpkin Tortilla chips. When the idea of a sweet autumn nacho recipe came to mind, I decided to try pair the Pumpkin Spice Syrup with the tortilla chips.
Salted Caramel Apple Cider… yes, please! I topped mine with whipped cream, cinnamon, and a drizzle of the pumpkin spice syrup.
These nachos didn’t stick around after the pictures were taken… my family gobbled them up! Speaking of which, wouldn’t these be a fun snack while waiting on your Thanksgiving dinner to be ready?
The pumpkin tortilla chips are not super sweet. They’re perfect for dipping in salsa, a sweet dip, specialty nachos, or eaten plain.
Autumn Harvest Sweet Nachos
1 bag Giant Eagle Pumpkin Tortilla Chips
8 ounces cream cheese, softened
1/3 cup brown sugar
1/2 teaspoon vanilla extract
1 apple, cored and chopped
1 teaspoon ground cinnamon
2 tablespoons Giant Eagle Pumpkin Spice Syrup
1. Arrange the pumpkin tortilla chips on a large plate or a platter.
2. Top the tortilla chips with the chopped apple.
3. In a medium bowl, mix together the cream cheese, brown sugar, and vanilla extract until smooth. Scoop the mixture into a zip top bag. Cut the bottom corner off the bag with scissors then squeeze the bag to pipe the sweet cream cheese onto the nachos.
4. Sprinkle the nachos with cinnamon and drizzle with the pumpkin spice syrup.
Serve immediately. Makes 8 servings.
